Baked Brinjal

Brinjal, Aubergine, Eggplant – all these are names of the same humble vegetable that is a commonplace in the Indian kitchen – the modest ‘Baingan’ in Hindi. Today we feature a delicious and healthy recipe that uses this nutritional powerhouse in the easiest way possible. But before we proceed to the recipe, let us learn a little about the nutritional profile of the brinjal.

The brinjal belongs to the ‘nightshade’ family of vegetables, which also includes many favorites like the potato, the tomato, and bell peppers. While some other nightshades are rather notorious for presence of toxins, the edible ones like brinjal actually contain a host of beneficial nutrients. Brinjal contains 9-10% of the RDA of fiber, making it an excellent source of dietary fiber. In addition, it contains several vitamins like Vitamin B3, B5, B6, and B1, and many other minerals like Manganese, Copper, and Potassium. All in all, the humble brinjal becomes a force to be reckoned with.

Without further delay, here is the recipe for the Baked Brinjal –ย 

 

Ingredients :

  • Brinjal – 1 large, cut into 2 halves
  • Onion – half of one small size
  • Tomato – 1 small
  • Spinach
  • Broccoli
  • Garlic
  • Cheese – 1 cube
  • Butter/ghee – 1 spoon
  • Salt to taste

Note: You can adjust all the ingredients according to your macros

Method:

  1. Scrape the two halves of the brinjal while making sure that you do not make holes in the shell. The scraped shell can be about 1 cm thick.
  2. Chop the scraped flesh into small cubes and reserve.
  3. Heat butter in pan, and fry all the ingredients one by one, till cooked.
  4. Preheat the oven to 190 degrees.
  5. Apply a little ghee on the inner part of the brinjal shells and sprinkle a little salt in it. Bake it for 5-7 mins in the oven.
  6. Then fill the cavities with the prepared filling and top it with cheese. You can alternate one layer of filling with one layer of cheese, if you wish (and IIFYM).
  7. Put it in the oven again, and bake it at 190 degrees for 20-22 mins. Voila!
  8. You can sprinkle your favorite spice mix or garnish with chopped spring onions/coriander/chilli flakes. Enjoy it hot!
