Crustless Cheesecake

A rich, decadent, creamy and absolutely delicious Crustless Cheesecake topped with peanut butter and dark chocolate glaze!!
What are you wondering? This, on a diet?
Absolutely!
Ingredients:
Cream Cheese: 650 grams
Stevia: 1/2 cup (Adjust as per taste)
Sour cream: 3/4 Cup (Use Greek yogurt if not sour cream)
Vanilla Essence: 1 tbsp
Eggs: 4
Note: It is very important for all the ingredients to be at room temperature.
For the glaze:
Peanut butter glaze: 
Peanut butter: 1 tbsp
Cream: 1 tsp
Butter: 1 tsp
Stevia: 1 sachet
Dark Chocolate glaze:
Unsweetened Dark chocolate: 50 gm
Cream: 1 tbsp
Stevia: 1 sachet
Recipe:
1. Preheat oven to 325 F / 175 C
2.Wrap the outside of a 9-inch springform pan with heavy foil to make it waterproof and thoroughly oil the entire interior of the pan with coconut oil or butter.
3. Using a stand mixer, beat the cream cheese and stevia until soft. (20 seconds), then add sour cream, scrape down the bowl as needed, and beat again for 10-15 seconds.
4. Add the eggs and vanilla essence and beat until smooth. (Another 10 seconds)
5. Pour the cheesecake batter into the pan and put the pan into a one/half inch water bath.
6. Bake for 60 to 75 minutes or until the sides are set and the middle of the cheesecake is wobbly. 
You can either cool the cake in the oven by leaving the door open or can take it out and cool too. Let it cool for about 1 hour.
Once cool, prepare the glaze.
For the glaze:
  • For the peanut butter glaze, heat the peanut butter and butter in a pan. Stir continuously until they melt. Take it off heat and mix the cream and stevia. Mix well until you get a sauce-like consistency. 
  • For dark chocolate glaze, heat the cream and stevia. When hot, take it off flame and add the chopped chocolate. Mix well until the chocolate melts and has a sauce-like consistency.
Add the toppings on the cake and let the cake set in the fridge for at least 4-5 hours. Best would be to let it set overnight.
